The Recipe
This will yield about 6 falafels
Ingredients
1 can of chickpeas (drained and rinsed)
1/2 cup of fresh parsley leaves
1/2 cup of fresh cilantro leaves
1/4 cup of fresh mint
2 cloves of garlic (finely chopped)
1 small onion (grated)
1 tsp of ground cumin
1/2 tsp of garlic salt
1 tsp of baking powder
2 tbsp of plain flour (or chickpea flour for a gluten-free option)
3 tbsp of olive oil
Method
Step 1: Blend the Ingredients
Begin by placing the chickpeas, parsley, mint, coriander, garlic, cumin, salt and baking powder into a food processor. Grate the onion and then squeeze the grated onion through a muslin cloth or clean rea towel to drain the excess moisture, then add the grated onion to the food processor. Pulse until the mixture is finely blended but still slightly chunky.
Once mixed, transfer the mixture into a bowl and gradually fold in the flour. The result should be soft yet firm enough to mould into patties.
Step 2: Shape the Falafel
Dampen your hands and take about 2 spoonful of the mixture to shape into small balls or patties, about the size of a tablespoon. This recipe yields about 6 pieces of falafel, perfect for sharing—or enjoying all on your own!
Step 3: Bake to Perfection
Preheat your oven to 400°F (200°C) and lightly grease a parchment-lined baking sheet with olive oil. Place your shaped falafels evenly on the sheet, and drizzle a little olive oil on each one for that delightful crispy finish.
Bake for 20-25 minutes, flipping them very carefully, so they don't fall apart, halfway through baking to ensure that they turn golden brown on both sides.
