🎵 Reasons to be cheerful 1, 2, 3 🎵 ... but wait there's more ... 4, 5, 6, 7 layers of loaded nacho goodness ... tortilla chips layered with spicy chorizo sausage, which has been gently fried with some red onion, lots of melty cheese, refried beans, jalapeno's, salsa and sour cream and a sprinkling of coriander ... Mmmm ... shall we add some more of that layering? Oh go on then, I do so hate it when the topping is gone before the rest of the tortilla chips ... Then a final topping of nachos and a good loading of cheddar, with a gorgeous topping of fresh guacamole when it comes out of the oven ...
Ah, nachos! This classic comfort food always lifts our spirits. the kind that makes you hum a happy tune while you indulge and delve into the layers.
Loaded Nachos Layer One
We take our layering very seriously around here, a little like selecting the perfect biscuit that guarantees the perfect tea dunking experience, you need to consider the quality of your tortilla chip ... An ideal tortilla chip strikes the perfect balance; it must be sturdy enough to hold toppings without breaking, yet light enough to deliver that satisfying crunch, from the base layer, to the final layer. I like a cool chip here, my daughter would argue and say the cheesier the better and opt for a cheese flavoured tortilla chip. Which ever you flavouring of choice, here is where we will start to build our layers, by adding a good layer of chips to an ovenproof dish. Now we can scatter over and evenly distribute a topping of spicy chorizo sausage, gently fried with red onions, with a good sprinkling of cheddar and a scattering of jalapenos ... We could stop there, but I've promised you layers, so onwards to layer two ...

Loaded Nachos The Second Layer:
Dot large spoonfuls of refried beans, salsa & sour cream on top and scatter with coriander leaves

Loaded Nachos The Third Layer
Another layer of tortilla chips ... And another layer of cheese, feel free to add a different cheese in to add the cheesy goodness, I've used a Pepper Jack here in contrast to grated cheddar.

Load with yet more cheddar cheese and more of that spicy chorizo sausage and fried onions, now we're really starting to build those layers of flavours ...

Another scattering of jalapenos, followed by more big spoonfuls of refried beans, salsa & sour cream and another scattering of coriander leaves

Loaded Nachos The Sixth Layer
Top with yet more tortilla chips and a final loading of cheddar cheese. Once all the layers are assembled, it’s time to bake. Baking not only melts the cheese but also allows the flavours to meld beautifully. Bake for 10 mins or so at 200°C/400°F/Gas Mark 6

Loaded Nachos The Seventh & Final Layer
And just when you thought we are done and I'd chested you out of that seventh layer and I going to swoop in after carefully removing the loaded nachos from the oven and top with a final layer of fresh guacamole. The creamy avocado mix adds a luxurious layer, ensuring every bite is a delightful celebration.
