Ah, it's that delightful time of year again when wild garlic makes its grand entrance. Its bright green leaves and unique scent blanket woodlands and meadows. If you've experienced the magic of wild garlic, you know its versatility can transform any meal.


Scones and pesto are common choices to feature this herb and I know you love your wild garlic scones your wild garlic pesto ... However, I was watching somebody make bacon butter by very simply blending crispy streaky bacon into soft butter ... And I was sat there thinking "What that needs is some wild garlic through it" ... Hey presto! I give you wild garlic & bacon butter  ... Imagine that on your scones, ooh or even better, hot crumpets oozing with melted wild garlic & bacon butter!!!

Wild Garlic & Bacon Butter Recipe


Ingredients


150g unsalted butter, softened

100g crispy streaky bacon, crumbled

A handful of fresh wild garlic leaves, washed and chopped

Salt and pepper, to taste


Method


  1. In a mixing bowl, combine the softened butter with crumbled bacon and chopped wild garlic.


  2. Season with salt and pepper according to your taste.


  3. Mix well until everything is evenly blended.


  4. Transfer the mixture onto parchment paper, roll it into a log, and twist the ends.


  5. Chill in the refrigerator until firm. Slice into rounds when you're ready to serve.


This simple recipe allows you to create a foodie treat that is sure to impress family and friends.
