Honey Roasted Cashew Nut and Cherry Granola - The Recipe

  • 4 cups rolled oats

  • 2 cups shredded coconut

  • 1 tsp cinnamon

  • ¾ cup vegetable oil

  • ½ cup quality honey

  • 1 cup dried cherries

  • ½ cup honey roasted cashews

  • ½ cup honey roasted peanuts

Prepping Your Granola

To achieve that perfect crunchy texture, begin by preheating your oven to 180°C / 350°F. This step is important, as a consistent temperature allows the granola to roast evenly.

In a large bowl, mix together the rolled oats, shredded coconut, and cinnamon. The warmth of the cinnamon will enhance the sweetness of the honey when combined later.

In a separate bowl, whisk together the vegetable oil and honey. This mixture not only adds flavour but also helps bind the other ingredients. Carefully pour this oil and honey blend over the oat and coconut mixture. Stir thoroughly with a wooden spoon until everything is evenly coated.

Baking to Perfection

Once mixed, transfer your mixture onto a sheet pan and spread it in an even layer for consistent roasting. Bake for 30 to 35 minutes, tossing the granola every 10 minutes using a large metal spatula. This helps ensure everything browns evenly without burning smaller pieces.

Stay vigilant as you bake, and enjoy the wonderful aroma wafting through your kitchen. You’ll know your granola is done when it turns a beautiful golden brown—around 25 minutes into baking, you can start checking for doneness.

After baking, let your granola cool on the pan. Stir it every 5 minutes as it cools to enhance its crunchy texture. Allowing it to cool completely is key to achieving that satisfying crunch.

Adding the Good Stuff

While the granola chills out, it’s time to prepare your add-ins. In a separate bowl, mix together the dried cherries, honey roasted cashews, and honey roasted peanuts. This combination not only adds beautiful flavour, but adds extra crunch to your final product.

Once your granola has cooled down, stir in this cherry and nut mixture. Make sure it’s well combined, so that each bite is bursting with flavour!

Serving and Storing Your Granola

This homemade Honey Roasted Cashew Nut and Cherry Granola can be enjoyed in many delicious ways. Serve it at room temperature as a snack, or over yogurt and a fruit compote for a wholesome breakfast. It also makes a perfect topping for smoothie bowls or blends well into fresh fruit salads.

For storage, keep your granola in an airtight container. It will stay fresh for up to two weeks, allowing you to enjoy this sweet crunchy bliss whenever you crave it.
