The Allure of Puff Pastry


Puff pastry is a beloved component of many dishes, and for good reason. Its versatility shines whether used in sweet desserts or savoury tarts. What makes puff pastry unique is its flaky layers. Each bite reveals a light, airy crunch that adds an incredible texture to any recipe.


For our Tomato and Gruyere Tart, using store-bought puff pastry saves time without compromising flavour. While making homemade pastry can be gratifying, the convenience of pre-made options is hard to beat. The golden crust serves as a perfect backdrop for the creamy cheese and juicy tomatoes, harmonizing textures and flavours in one incredible dish.


Tomato and Gruyere Tart - The Recipe


Ingredients:


  • 1 sheet of puff pastry (thawed if frozen)

  • 8 large ripe tomatoes,

  • 1 cup Gruyere cheese, grated

  • 2 tbsp Dijon mustard

  • 2 tbsp tomato pesto

  • 1 tbsp of olive oil

  • Fresh basil leaves, for garnish

  • Salt and pepper, to taste

  • Olive oil, for drizzling


Method:



Start by preheating your oven to 400°F / 200°C. A hot oven is essential for baking to achieve that perfect puff and a golden crust.


On a floured surface, roll out the puff pastry, aiming for about ¼ inch thickness. Shape it into a rectangle or circle based on your preference. Transfer it carefully onto a baking sheet lined with parchment paper. Place smaller baking sheet on top of the pastry and blind bake the pastry in the oven for 10 to 15 minutes. Remove from the oven and allow to cool.


Slice the tomatoes and place them in a bowl. Drizzle with olive oil and season with salt and pepper. Toss them gently with the pesto and olive oil until they are evenly coated.


Spread a thin layer of Dijon mustard over the blind baked pastry case. This adds flavour and creates a barrier that helps keep the pastry crispy, preventing sogginess from the tomatoes.


Evenly sprinkle a generous layer of grated Gruyere cheese over the mustard. If you love cheese, don’t hesitate to add more for a deliciously gooey tart.


Arrange the marinated tomato slices evenly over the cheese. Overlap them slightly for a visually appealing presentation.


Lower the temperature of the oven to 350°F / 180°C. Place the tart in the preheated oven and bake for 25-30 minutes until the pastry is puffed and golden brown.


Once baked, let the tart cool for a few moments. Just before serving, garnish with fresh basil leaves. This tart can be enjoyed warm or at room temperature, making it a perfect dish for picnics or outdoor dining.
