How to Make Cheesy Stuffed Mozzarella Onion Rings: The Ultimate Appetizer for Cheese Lovers

Are you searching for a snack to wow your guests or indulge in during a quiet evening? Look no further! Cheesy Stuffed Mozzarella Onion Rings are the perfect choice. This unique take on a classic onion ring combines the sweetness of onions with gooey mozzarella cheese, all encased in a crispy, spicy coating. These delicious bites are sure to be a hit at game nights, parties, and family gatherings.

This recipe call for mozzarella sticks, but I'm a Mum, so we are calling them Cheese Strings, because that how the fridge contents roll in this house!
Cheesy Stuffed Mozzarella Onion Rings - The Recipe
Ingredients:
2 large white onions: Choose firm, fresh onions for the best texture and flavor.
4 Cheese Strings - Sliced into 4 slices, then cut to suit as you fill the gaps in the onion rings
2 cups flour (250 g): All-purpose flour works best for coating the rings.
3 eggs: Lightly beaten, these will help the breadcrumbs adhere to the rings.
1 tbsp Siracha
2 cups breadcrumbs (230 g): Use plain or seasoned breadcrumbs for a crispy exterior.
Oil, for frying: Choose a neutral oil with a high smoke point, like vegetable or canola oil.
Method:
Peel the onions and cut them into 1-centimeter (½ inch) rings. Separate the rings carefully, ensuring they remain intact. You should have a variety of ring sizes to use.
Slice the Cheese Strings into 4 even strips. You’ll need enough strips to fill the gaps between the onion rings. For extra cheesiness, use two layers of cheese between the rings.
Take a smaller onion ring and place it inside a larger one. Fill the gap between the rings with Cheese String strips. Ensure the cheese fits snugly between the rings. Repeat with the remaining onion rings. Once assembled, place them in the fridge for 1 hour to set.
Prepare three separate bowls: one with flour, one with beaten eggs & the Siracha sauce and one with breadcrumbs. This setup will help in coating the onion rings evenly.
Take each prepared onion ring and coat it in the flour first. Then dip it into the beaten eggs, followed by the breadcrumbs. For an extra crispy coating, dip the ring back into the egg and then into the breadcrumbs again. Repeat with all the onion rings. Once coated, place them back in the freezer for 30 minutes to set the coating.
Heat your deep fat fryer until it indicates it's at the correct temperature or fill a large pot with oil and set it over medium-high heat. Heat the oil until it reaches 350°F (175°C).
Carefully place the coated onion rings into the hot oil. Fry them until golden brown, which should take about 2-3 minutes per side. Be cautious not to fry them for too long as the cheese may ooze out completely. Fry in batches if necessary to avoid overcrowding the pot.
Remove the fried onion rings from the oil and place them on a paper towel-lined plate to drain any excess oil and serve.
