Garlicky Parmesan Fries A Treat Worth Savouring
Trust me, this is no ordinary plate of cheesy fries, don't scroll by, I am doing a little happy dance over this one! ... Of all the recipes I have posted this week, this is absolutely the one I urge you to try ... Never have I presented a plate of fries to taste reviews of "Phwoaarrrr, flipping 'eck, they're gooooooood. What have you coated those in??" and "Are these actually legal? All fries should be served like this, there actually should be no other way of serving fries!"
I like to use a slightly chunkier, skin on fry for this, but any frozen fries will work. The secret to getting this recipe just right is to smother the fries in heavenly buttery, garlicky oil, enriched with parmesan cheese, as soon as they come out of the oven, so they absorb all that fabulous flavour, then pile them high with lashings of freshly grated parmesan and parsley, then share away, whilst basking in the glow of praise!
Honestly, they are decadently rich and this isn't something you're going to eat every day, but if you're going to be naughty and treat yourself, this recipe has got to be the one!
Choosing the Right Fries
While you can use any frozen fries, I recommend chunkier, skin-on varieties. They deliver a satisfying crunch while perfectly soaking up the garlicky and cheesy flavors.
The Garlic and Butter Blend
The secret to getting this recipe just right is to smother the fries in heavenly buttery, garlicky oil, enriched with parmesan cheese, as soon as they come out of the oven, so they absorb all that fabulous flavour, then pile them high with lashings of freshly grated parmesan and parsley, then share away, whilst basking in the glow of praise!
The Recipe
Ingredients
1 bag frozen chips
50g of grated parmesan cheese (the powdery type)
125g garlic butter (I use Lurpak)
1/4 cup of vegetable oil or garlic oil
1 cup of freshly grated parmesan
Small bunch of chopped fresh flat leaf parsley
Directions
Cook fries per pack instructions
In the meantime, gently melt garlic butter in a small saucepan. Your not looking for this to get super hot, just enough to melt the butter. Add the oil and powdery parmesan and combine and set aside, whilst you freshly grate your parmesan and parsley.
As soon as the fires are out of the oven, pour over the garlicky buttery, cheesy mixture and toss the fries around in the goodness.
Then ... Grab yourself a platter and pile half the the fries on the plate, scatter over half the freshly grated parmesan and chopped parsley. Now pile up the rest of the fries on top, add yet more freshly grated parmesan and parsley, they pour over any left over garlicky, cheesy, buttery oil left in the pan or roasting tray.
