Ingredients:
2 tablespoons of butter
1 large leek, chopped
2 Cloves of garlic, finely chopped
2 bunches of asparagus, trimmed and cut into 1-inch pieces (Reserve a few tips for garnish)
3 - 4 medium potatoes, pealed and cut into equal chunks
500ml of vegetable or chicken stock
1 large handful of chopped parsley
Salt to taste
1 cup of cooked crab meat
2 tablespoons of garlic, minced
Method:
In a pot, melt the butter over medium heat. Add the leeks and season with salt, sauté for about 5 minutes until they soften. Add the garlic and allow to cook for 1 minute.
Stir in the potatoes and add the stock. Place the lid on and allow to simmer for 10 to 15 minutes until the potatoes are tender.
Add the asparagus and cook for another 5 minutes.
Remove the soup from the heat and allow to cool slightly before blending the soup with the parsley until smooth Season with salt and pepper to taste.
Bring a small pan of water to the boil and cook the reserved asparagus until it has turned bright green and is still tender. This will only a few minutes.
In a separate pan, prepare the garlic butter crab by melting additional butter. Sauté the minced garlic and then add the crab meat until warmed through.
